Grilled or smoked Salmon with a Hurry Up! relish sauce

Salmon relish for smoked or grilled salmonSometimes you just have to “hurry up!” when it comes to preparing a meal. Here’s a Salmon marinade/relish recipe that’s easy, flavorful and takes less than thirty minutes to prepare and cook. Hurry Up and enjoy it!

Ingredients For Marinade:

4-6oz. Salmon fillets

1.5 tablespoons honey

2 tablespoons soy sauce-low sodium variety

1 teaspoon canola or olive oil

¼ teaspoon freshly ground black pepper

Place ingredients in to a re-sealable bag, add fish. Seal bag. Marinate 10 minutes, turning over once.

Relish or Sauce:

½ cup mango, seeded, peeled and diced

½ cup kiwi fruit, peeled and diced

¼ cup cilantro, chopped

Juice of 1 small lime

For Relish: Dice and place all ingredients in a bowl, combine and refrigerate. Serve with grilled salmon.

For Sauce: Place all ingredients into a blender and blend until smooth. Baste on fillets while cooking or serve at the table.

 To cook fish: While making marindade and relish/sauce; Heat grill to 350-400F, (approximately 10 minutes) Spray cooking grates or griddle with cooking spray. Place fish on grates or griddle, cook 5 minutes per side. If using sauce, brush each fillet once while cooking. When fish flakes-it’s done. Pull off immediately and serve.
